As European President of the associatoin JRE (Jeunes Restaurateurs Europeennes), Ernesto's philosophy is one of the innovations in the culinary and hospitality industry. For years, he travelled extensively all over the world including: Europe, Asia, United States and Middle East, trying to combine work and discovery of other cultures and cuisines.
In 2003, he took over his father's position as Executive Chef of the family operated Don Alfonso 1890, 2 Michelin Star restaurant in the Amalfi coast of Italy.
The Don Alfonso brand is dedicated to preserving the thousand-year-old food tradition on the the Amalfi Coast and the Sorrento Peninsula reimagined in the finest creative cuisine made from top-quality local ingredients. Their "zero-waste" program, enables them to recycle 95% of the waste generated in the hotel and restaurant. This resulted in a green Michelin Star; for an outstanding sustainable accomplishment. For years, Don Alfonso 1890 has been consistently voted by Trip Advisors users as the Best Italian Restaurant. Together with his family Chef Ernesto has opened restaurants all over the world which follow the philosophy of Don Alfonso 1890.
